塩分2g以内に抑えた減塩レシピ㉜ カルボナーラ (1人当たりの塩分0.68g)
材料(2人分):
・豚フィレ100g
※片栗粉 小さじ2
※塩 1g
※こしょう 少々
・スナップエンドウ6本
・スパゲッティ120g
・バター15g
★生クリーム100ml
★卵黄 2個分
★パルミジャーノ20g (塩分0.36g)
作り方:
1 豚肉は細切りにして、※の調味料をまぶす。
2 ★の材料を混ぜておく。
3 スナップエンドウの筋を取る。
4 スパゲティは、半分くらいに切り、途中でスナップエンドウを入れ、ゆでる。
5 フライパンにバターを熱し、豚肉をこんがり焼く。★の材料を加え、火を止める。スパゲティとスナップエンドウを加え、混ぜながら、余熱で卵黄に火を通す。
6 器に盛り、好みでパルミジャーノをふりかける。
コメント:スパゲティを半分に切ったり、スナップえんどうを一緒に茹でたりすると、多少経済的になります。
Reduced-salt recipe with less than 2g of salt ㉜ Carbonara
(salt content per person 0.68g)
Ingredients (for 2 people):
・100g pork fillet
※2 tsp of potato starch
※1g salt and a pinch of pepper
・6 snap peas
・120g spaghetti
・15g butter
★ 120ml fresh cream
★ 2 egg yolks
★20g Parmigiano cheese (salt content 0.36g)
How to make:
1 Cut the pork into thin strips and rub the ※ seasonings onto the meat.
2 Mix in the ★ ingredients.
3 Remove the stems from the snap peas.
4 Cut spaghetti in half before boiling, add the snap peas halfway through, and finish boiling the pasta, then drain.
5Heat the butter in a frying pan and brown the pork. Add the ★ ingredients and turn off the heat. Add the spaghetti and snap peas and mix in the egg yolk and cook with the residual heat while you stir.
6 Serve in a bowl. Top with parmigiano if desired.
Comment: Cutting spaghetti in half or boiling snap peas together is eco-friendlier because you use less water and gas.
